- 1 cup roasted pumpkin
- 1 cup whipped feta cheese
- ½ cup cream cheese
- 2 garlic cloves, minced
- 2 tablespoons lemon juice
- ½ teaspoon ground nutmeg
- ½ teaspoon black pepper
- ¼ teaspoon smoked paprika
- 2 tablespoons olive oil
- Salt to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Cut the pumpkin in half, scoop out seeds, and roast cut-side down on a baking sheet for 30-40 minutes until tender. Let it cool before scooping out the flesh.
- In a food processor, combine the roasted pumpkin, feta cheese, cream cheese, garlic, lemon juice, and spices. Blend until smooth and creamy.
- While blending, drizzle in the olive oil to create a silky consistency. Adjust salt and pepper according to taste.
- Transfer the dip to a serving bowl and refrigerate for at least one hour to meld the flavors.
- Garnish with fresh herbs, a drizzle of olive oil, and your choice of dippers.
Notes
Use ripe pumpkin for deeper flavor and don’t skimp on cream cheese for creaminess. Adjust garlic to taste.
