- 8 ounces rotini pasta
- 2 cups fresh mushrooms (cremini or button)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the pasta: Start by bringing a large pot of salted water to a boil. Add the rotini and cook according to the package instructions until al dente. Reserve a cup of pasta water for later and drain the rest.
- Sauté the mushrooms: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, then add sliced mushrooms. Cook until they release their juices and begin to brown, about 5–7 minutes.
- Mix it up: Add the cooked rotini to the skillet, gently tossing with the sautéed mushrooms and garlic. If the pasta seems dry, gradually add reserved pasta water until you reach the desired sauciness.
- Season and finish: Toss in freshly chopped herbs and a drizzle of melted butter, then finish with a generous shower of grated parmesan. Season with salt and pepper to taste.
- Serve: Plate the rotini and add extra parmesan and herbs on top for that vibrant finish.
Notes
Avoid overcooking your mushrooms; they should be golden and tender but still retain some bite for texture.
