- 1 cup brown sugar, packed

- 1 cup toffee bits
- 2 large eggs

- 1 teaspoon coarse sea salt (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Melt the butter in a medium saucepan over low heat, ensuring it doesn’t brown.
- Combine the melted butter with the granulated and brown sugars in a large mixing bowl, whisking until smooth.
- Add the eggs and vanilla extract, blending until well combined.
- Whisk together the flour, baking soda, and baking powder in another bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Fold in the toffee bits, ensuring they are evenly distributed.
- Scoop rounded balls of dough onto the prepared baking sheets, spacing them a couple of inches apart.
- Sprinkle coarse sea salt on each cookie mound before baking.
- Bake for 10-12 minutes or until the edges are golden, and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. You can also freeze the dough for later use.
