Instructions
- Set up the slow cooker by cutting the beef into bite-sized cubes and seasoning it generously with salt and pepper.
- Sear the beef in a skillet over medium-high heat until browned on all sides.
- Add the seared beef to the slow cooker along with chopped onions, bell peppers, minced garlic, corn, and diced tomatoes.
- Pour the beef broth over the mixture.
- Season generously with chili powder, cumin, and smoked paprika, then stir well.
- Cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
- Final touch: about 30 minutes before serving, taste and adjust seasonings as needed.
- Garnish each bowl with crispy tortilla chips, avocado slices, fresh cilantro, and a squeeze of lime.
