Instructions

  1. Set up the slow cooker by cutting the beef into bite-sized cubes and seasoning it generously with salt and pepper.
  2. Sear the beef in a skillet over medium-high heat until browned on all sides.
  3. Add the seared beef to the slow cooker along with chopped onions, bell peppers, minced garlic, corn, and diced tomatoes.
  4. Pour the beef broth over the mixture.
  5. Season generously with chili powder, cumin, and smoked paprika, then stir well.
  6. Cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
