- 2 tablespoons Cajun seasoning
- 1 cup quick-cooking grits
- 4 cups water or broth
- 2 tablespoons butter
- 1/2 cup heavy cream or milk
- Fresh chives or parsley, chopped for garnish
- Olive oil, for cooking
Instructions
- In a medium saucepan, bring water or broth to a boil.
- Gradually whisk in the grits, stirring to avoid lumps. Reduce heat, cover, and cook until thick and creamy (5-7 minutes for quick-cooking).
- Add butter and cream to the grits and stir well.
- In a skillet, heat olive oil over medium-high heat.
- Toss shrimp with Cajun seasoning, then add them to the skillet in a single layer.
- Cook for 2-3 minutes on each side until pink and golden.
- Squeeze lemon juice over shrimp before serving.
- Assemble bowls with grits, topped with shrimp and garnished with fresh herbs.
Notes
For a lighter dish, substitute heavy cream with vegetable broth. Adjust the Cajun seasoning to taste.
