  • Olive oil, for cooking

Instructions

  1. In a medium saucepan, bring water or broth to a boil.
  2. Gradually whisk in the grits, stirring to avoid lumps. Reduce heat, cover, and cook until thick and creamy (5-7 minutes for quick-cooking).
  3. Add butter and cream to the grits and stir well.
  4. In a skillet, heat olive oil over medium-high heat.
  5. Toss shrimp with Cajun seasoning, then add them to the skillet in a single layer.
  6. Cook for 2-3 minutes on each side until pink and golden.
  7. Squeeze lemon juice over shrimp before serving.
  8. Assemble bowls with grits, topped with shrimp and garnished with fresh herbs.

Notes

For a lighter dish, substitute heavy cream with vegetable broth. Adjust the Cajun seasoning to taste.
