Ingredients

- 2 cups broccoli florets
- 2 cups Yukon Gold or Russet potatoes, peeled and cubed
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano or thyme
- 1 cup panko breadcrumbs
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the potatoes by peeling and cubing them into bite-sized pieces, then boiling for about 10 minutes until fork-tender.
- Blanch the broccoli in boiling water for 2-3 minutes until bright green.
- Mash the cooked potatoes and blanched broccoli together with minced garlic and seasonings.
- Form tablespoon-sized portions into balls or flat discs.
- Coat each bite in breadcrumbs and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes, flipping halfway through until golden and crispy.
- Serve warm and enjoy!
Notes
Great to pair with dips like garlic aioli or ranch dressing. Can be frozen for later use.
