Description

Delightful crispy bites made with broccoli and potatoes, infused with garlic and herbs, perfect as a snack or side dish.


Ingredients

  • 2 cups broccoli florets
  • 2 cups Yukon Gold or Russet potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano or thyme
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes by peeling and cubing them into bite-sized pieces, then boiling for about 10 minutes until fork-tender.
  3. Blanch the broccoli in boiling water for 2-3 minutes until bright green.
  4. Mash the cooked potatoes and blanched broccoli together with minced garlic and seasonings.
  5. Form tablespoon-sized portions into balls or flat discs.
  6. Coat each bite in breadcrumbs and place on a parchment-lined baking sheet.
  7. Bake for 20-25 minutes, flipping halfway through until golden and crispy.
  8. Serve warm and enjoy!

Notes

Great to pair with dips like garlic aioli or ranch dressing. Can be frozen for later use.
