  • 1/2 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp paprika

  • Vegetable oil, for frying
  • 1/4 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 12 tbsp sriracha (to taste)
  • 1 cup bell peppers, sliced
  • 1 cup cucumbers, sliced
  • 1 avocado, diced
  • Fresh cilantro, for garnish
  • Cooked rice or quinoa, for serving

Instructions

  1. Cut salmon into bite-sized pieces, about 1-2 inches. Pat dry and season with salt and pepper.
  2. In a bowl, whisk together flour, salt, and pepper. In another bowl, mix panko breadcrumbs with garlic powder and paprika.
  3. Dip each salmon piece in the flour mixture, then in the egg wash, and finally coat in the panko mixture.
  4. Heat vegetable oil in a skillet over medium-high heat and fry the salmon bites until golden brown, about 2-3 minutes per side.
  5. In a bowl, combine mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce.
  6. Assemble the bowls with a base of rice or quinoa, topped with crispy salmon bites, fresh vegetables, and drizzle with Bang Bang sauce.

Notes

For a lighter option, use firm tofu instead of salmon. Ensure to dry the salmon well before breading for the crispiest finish.
