- 1 lb fresh skinless salmon fillets
- 1/2 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- Vegetable oil, for frying
- 1/4 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1–2 tbsp sriracha (to taste)
- 1 cup bell peppers, sliced
- 1 cup cucumbers, sliced
- 1 avocado, diced
- Fresh cilantro, for garnish
- Cooked rice or quinoa, for serving
Instructions
- Cut salmon into bite-sized pieces, about 1-2 inches. Pat dry and season with salt and pepper.
- In a bowl, whisk together flour, salt, and pepper. In another bowl, mix panko breadcrumbs with garlic powder and paprika.
- Dip each salmon piece in the flour mixture, then in the egg wash, and finally coat in the panko mixture.
- Heat vegetable oil in a skillet over medium-high heat and fry the salmon bites until golden brown, about 2-3 minutes per side.
- In a bowl, combine mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce.
- Assemble the bowls with a base of rice or quinoa, topped with crispy salmon bites, fresh vegetables, and drizzle with Bang Bang sauce.
Notes
For a lighter option, use firm tofu instead of salmon. Ensure to dry the salmon well before breading for the crispiest finish.
