Ingredients

  • Fettuccine or linguine
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes
  • 2 cups fresh spinach or kale
  • 1/2 cup grated parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the pasta in a large pot of salted water according to package instructions until al dente. Reserve about a cup of pasta water before draining.
  2. Sauté minced garlic in a skillet with melted butter over medium heat for about 30 seconds until fragrant.
  3. Add fresh lobster to the skillet and cook until just opaque, about 3–4 minutes.
  4. Pour in the heavy cream, stirring continuously, and allow it to simmer gently to thicken.
  5. Mix in sun-dried tomatoes and greens, letting them wilt in the heat of the sauce.
  6. Combine the cooked pasta with the sauce, tossing to coat evenly and adding parmesan cheese until melted.
  7. Garnish with fresh basil and serve immediately.

Notes

For substitutions, use shrimp or scallops instead of lobster, and half-and-half instead of heavy cream for a lighter dish.
