- Fresh lobster or frozen lobster tail
- Fettuccine or linguine
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes
- 2 cups fresh spinach or kale
- 1/2 cup grated parmesan cheese
- Fresh basil for garnish
Instructions
- Cook the pasta in a large pot of salted water according to package instructions until al dente. Reserve about a cup of pasta water before draining.
- Sauté minced garlic in a skillet with melted butter over medium heat for about 30 seconds until fragrant.
- Add fresh lobster to the skillet and cook until just opaque, about 3–4 minutes.
- Pour in the heavy cream, stirring continuously, and allow it to simmer gently to thicken.
- Mix in sun-dried tomatoes and greens, letting them wilt in the heat of the sauce.
- Combine the cooked pasta with the sauce, tossing to coat evenly and adding parmesan cheese until melted.
- Garnish with fresh basil and serve immediately.
Notes
For substitutions, use shrimp or scallops instead of lobster, and half-and-half instead of heavy cream for a lighter dish.
