- 1 onion, diced
- 1 cup heavy cream
- 1/2 cup white wine (or chicken broth)
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Begin by prepping your ingredients: dice your onion, mince the garlic, and chop the fresh tarragon if using.
- In a large skillet, melt butter over medium heat. Add diced onions and cook until soft and translucent, about 5 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.
- Season chicken pieces with salt and pepper, then add them to the skillet. Brown the chicken on both sides for about 4-5 minutes.
- Pour in the white wine, scraping up any bits stuck to the pan. Let it simmer for about 2-3 minutes.
- Stir in chicken broth and let everything bubble happily for 8-10 minutes, allowing chicken to cook through.
- Lower the heat, then add heavy cream and fresh tarragon, stirring gently. Cook for another 5 minutes until the sauce thickens slightly.
- Taste and adjust seasoning as needed before serving.
- Serve creamy tarragon chicken over rice, pasta, or mashed potatoes.
Notes
For a healthier twist, you can replace heavy cream with Greek yogurt. Don’t forget to check the chicken’s internal temperature to ensure it’s fully cooked.
