  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Begin by prepping your ingredients: dice your onion, mince the garlic, and chop the fresh tarragon if using.
  2. In a large skillet, melt butter over medium heat. Add diced onions and cook until soft and translucent, about 5 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.
  3. Season chicken pieces with salt and pepper, then add them to the skillet. Brown the chicken on both sides for about 4-5 minutes.
  4. Pour in the white wine, scraping up any bits stuck to the pan. Let it simmer for about 2-3 minutes.
  5. Stir in chicken broth and let everything bubble happily for 8-10 minutes, allowing chicken to cook through.
  6. Lower the heat, then add heavy cream and fresh tarragon, stirring gently. Cook for another 5 minutes until the sauce thickens slightly.
  7. Taste and adjust seasoning as needed before serving.
