  • 1 pound ground meat (beef, turkey, or chicken) or canned black beans/lentils
  • 1 cup chopped bell peppers
  • 1 cup corn
  • 1 can (14.5 ounces) diced tomatoes or tomato sauce
  • 4 cups chicken or vegetable broth
  • 1 packet taco seasoning
  • 4 ounces cream cheese or sour cream
  • Fresh cilantro, for garnish
  • Lime, for squeezing over the soup

Instructions

  1. Sauté the diced onions in olive oil until translucent.
  2. Add minced garlic and sauté until fragrant.
  3. Cook the ground meat until browned, breaking it apart as it cooks.
  4. Toss in chopped bell peppers and corn, cooking for a few minutes.
  5. Pour in canned tomatoes and broth, stirring well.
  6. Season with taco seasoning and let it simmer for 15-20 minutes.
  7. Lower the heat and stir in cream cheese or sour cream until melted.
  8. Finish with a squeeze of fresh lime juice and garnish with cilantro.
