Ingredients
- Lasagna noodles (dried or no-boil)
- Fresh spinach (or frozen, thawed and drained)
- Cremini or shiitake mushrooms (sliced)
- Ricotta cheese
- Mozzarella cheese (shredded)
- Parmesan cheese (grated)
- Heavy cream or béchamel sauce
- Olive oil
- Onion (chopped)
- Garlic (minced)
- Salt and pepper
- Nutmeg (pinch)
- Fresh basil or Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large skillet, sauté chopped onions and minced garlic in olive oil until translucent, about 3-4 minutes. Add sliced mushrooms and cook until golden-brown. Stir in the spinach until wilted, season with salt, pepper, and nutmeg. Set aside.
- In a bowl, mix ricotta cheese with an egg, salt, and fresh herbs.
- Layer the ingredients in the baking dish: start with a thin layer of creamy sauce, followed by noodles, the ricotta mixture, mushrooms and spinach, and a layer of mozzarella. Repeat, finishing with noodles and creamy sauce topped with mozzarella and Parmesan.
- Cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Let cool for 10-15 minutes before slicing.
Notes
Resting the lasagna is key for clean slices. Use fresh ingredients for best flavor, and feel free to add more veggies or cheeses as you like.
