  • 2 cups fresh spinach (or thawed frozen spinach)
  • 1 cup canned or frozen artichoke hearts, drained
  • 2 cloves garlic, minced
  • 1/2 cup cream or milk (or non-fat Greek yogurt)
  • 2 tbsp olive oil or butter
  • Herbs: fresh thyme, salt, pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Sauté minced garlic for about 1 minute until fragrant.
  4. Add fresh spinach, stirring until just wilted.
  5. Toss in the artichoke hearts and stir for a few minutes.
  6. Combine cottage cheese, sautéed spinach, artichokes, and herbs in a bowl.
  7. Brown the chicken in the same skillet for 4-5 minutes on each side.
