Instructions

  1. Prep the Spaghetti Squash: Preheat your oven to 400°F (205°C). Halve the spaghetti squash lengthwise and scoop out the seeds. Brush the insides with olive oil, and sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for about 40-50 minutes, or until tender.
  2. Sauté the Mushrooms: In a skillet over medium heat, add a drizzle of olive oil. Toss in sliced mushrooms and a pinch of salt. Sauté until they’re golden brown and have released their moisture, about 6-8 minutes.
  3. Make the Cream Sauce: In a saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the heavy cream, let it simmer gently for 5 minutes, and then whisk in grated Parmesan cheese until melted and creamy. Season with salt, pepper, thyme, and a hint of nutmeg for warmth.
  4. Combine Everything: Once the spaghetti squash is done, let it cool for a few minutes, then scrape the insides with a fork to create spaghetti-like strands. Fold this into the mushroom mixture, drizzle with the cream sauce, and mix until evenly coated.
