- 1 medium Spaghetti Squash
- 2 cups mixed Mushrooms (cremini and shiitake)
- 1 cup Heavy Cream
- 1 cup grated Parmesan Cheese
- 2 cloves Garlic, minced

- Fresh Thyme and Parsley
- Salt and Pepper to taste
- 2 tablespoons Butter
- Olive Oil for roasting

Instructions
- Prep the Spaghetti Squash: Preheat your oven to 400°F (205°C). Halve the spaghetti squash lengthwise and scoop out the seeds. Brush the insides with olive oil, and sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for about 40-50 minutes, or until tender.
- Sauté the Mushrooms: In a skillet over medium heat, add a drizzle of olive oil. Toss in sliced mushrooms and a pinch of salt. Sauté until they’re golden brown and have released their moisture, about 6-8 minutes.
- Make the Cream Sauce: In a saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the heavy cream, let it simmer gently for 5 minutes, and then whisk in grated Parmesan cheese until melted and creamy. Season with salt, pepper, thyme, and a hint of nutmeg for warmth.
- Combine Everything: Once the spaghetti squash is done, let it cool for a few minutes, then scrape the insides with a fork to create spaghetti-like strands. Fold this into the mushroom mixture, drizzle with the cream sauce, and mix until evenly coated.
- Bake to Perfection: Transfer the mixture to a greased baking dish. In a bowl, toss breadcrumbs with melted butter and sprinkle on top. Bake in the oven at 375°F (190°C) for about 20-25 minutes or until golden and bubbly.
- Serve and Enjoy: Allow it to set for a few minutes before diving in. It’s divine when served warm, alongside a fresh salad or roasted veggies.
