Instructions
- Prepare chicken: Season with salt and pepper and leave it whole or cut into chunks.
- Blend cream cheese: Soften in the microwave for about 30 seconds.
- Combine ingredients in slow cooker: Layer chicken, onions, garlic, and vegetables.
- Add liquid: Pour in chicken broth and mix in cream cheese, thyme, and rosemary.
- Cook low and slow: Set slow cooker to low for 6-7 hours or high for 3-4 hours.
- Finish and serve: Stir in heavy cream 30 minutes before serving.
- Garnish and enjoy: Top with fresh herbs or grated Parmesan.
