  • 1 medium sweet potato, peeled and diced

  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • Salt and pepper, to taste
  • Nutmeg, to taste
  • Grated cheese (optional)
  • Olive oil

Instructions

  1. Peel and dice the sweet potato into small cubes.
  2. In a large skillet, heat olive oil over medium heat, add diced sweet potato, season with salt and pepper, and sauté for 5-7 minutes until slightly tender.
  3. Add minced garlic and chopped onions, and sauté until fragrant, about 2 minutes.
  4. Pour in the heavy cream and bring to a simmer; stir to combine.
  5. Add cooked tortellini and fresh spinach; stir gently until the spinach wilts.
  6. If the sauce gets too thick, add a splash of pasta water to loosen it.
  7. Finish with grated cheese if using, and adjust seasoning to taste.
  8. Serve hot, garnished with parsley or extra cheese as desired.
