- Fresh or frozen tortellini
- 1 medium sweet potato, peeled and diced
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 small onion, chopped
- Salt and pepper, to taste
- Nutmeg, to taste
- Grated cheese (optional)
- Olive oil
Instructions
- Peel and dice the sweet potato into small cubes.
- In a large skillet, heat olive oil over medium heat, add diced sweet potato, season with salt and pepper, and sauté for 5-7 minutes until slightly tender.
- Add minced garlic and chopped onions, and sauté until fragrant, about 2 minutes.
- Pour in the heavy cream and bring to a simmer; stir to combine.
- Add cooked tortellini and fresh spinach; stir gently until the spinach wilts.
- If the sauce gets too thick, add a splash of pasta water to loosen it.
- Finish with grated cheese if using, and adjust seasoning to taste.
- Serve hot, garnished with parsley or extra cheese as desired.
Notes
Feel free to add more vegetables or protein like grilled chicken or chickpeas for a heartier meal.
