Ingredients

  • Spaghetti or fettuccine pasta
  • Fresh ricotta cheese
  • Fresh lemon juice and zest
  • Garlic, minced
  • Extra-virgin olive oil
  • Salt and pepper
  • Fresh basil or parsley
  • Freshly grated Parmesan cheese

Instructions

  1. Boil a large pot of salted water. Add pasta and cook until al dente, about 8-10 minutes. Reserve a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1-2 minutes.
  3. In a bowl, mix ricotta with lemon juice, zest, salt, and pepper. Add a splash of reserved pasta water to achieve a creamy consistency.
  4. Add cooked pasta to the skillet with garlic. Pour in the ricotta mixture and toss gently, adding more pasta water if necessary.
  5. Serve immediately, garnished with Parmesan and chopped herbs, plus an extra sprinkle of lemon zest if desired.

Notes

For extra richness, consider adding sautéed mushrooms or spinach towards the end.
