Ingredients
- Spaghetti or fettuccine pasta
- Fresh ricotta cheese
- Fresh lemon juice and zest
- Garlic, minced
- Extra-virgin olive oil
- Salt and pepper
- Fresh basil or parsley
- Freshly grated Parmesan cheese
Instructions
- Boil a large pot of salted water. Add pasta and cook until al dente, about 8-10 minutes. Reserve a cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1-2 minutes.
- In a bowl, mix ricotta with lemon juice, zest, salt, and pepper. Add a splash of reserved pasta water to achieve a creamy consistency.
- Add cooked pasta to the skillet with garlic. Pour in the ricotta mixture and toss gently, adding more pasta water if necessary.
- Serve immediately, garnished with Parmesan and chopped herbs, plus an extra sprinkle of lemon zest if desired.
Notes
For extra richness, consider adding sautéed mushrooms or spinach towards the end.
