- 1 onion (chopped)
- 2 garlic cloves (minced)

- 4 cups seafood or chicken broth
- 1/2 cup dry white wine
- 2 bay leaves
- 1 sprig fresh thyme
- 1 cup heavy cream
- Salt and pepper to taste
- Pinch of cayenne pepper (optional)
- Fresh parsley or chives (for garnish)
Instructions
- Prepare the seafood: Rinse crabmeat and shrimp under cold water; set aside.
- Sauté the aromatics: In a large pot, melt butter over medium heat. Add onion, garlic, and celery; cook until onions are translucent, about 5 minutes.
- Make the roux: Add flour to the pot; stir to combine and cook for 2 minutes.
- Add broth and flavor: Slowly pour in broth and white wine; bring to a simmer. Toss in bay leaves and thyme; cook for 15 minutes.
- Introduce the seafood: Gently fold in crabmeat and shrimp; cook for another 5-7 minutes until shrimp is pink and cooked through.
- Stir in cream: Reduce heat, stir in heavy cream, and warm through without boiling. Taste and adjust seasoning.
- Serve with love: Remove thyme sprig and bay leaves; ladle bisque into bowls and garnish with fresh herbs.

Pair with a crisp green salad or buttery garlic bread for a complete meal. Avoid freezing daft bisque with cream; add cream after reheating if needed.
