Ingredients

  • 1 lb steak (sirloin or filet mignon)
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh oregano, chopped
  • 1 lemon (juiced)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook the tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta water.
  2. Sauté the steak: In a large skillet over medium-high heat, melt a tablespoon of butter. Season the steak bites with salt and pepper, adding them to the skillet once the butter is sizzling. Sauté until browned, about 3-5 minutes for medium doneness. Remove the steak from the skillet and set aside.
  3. Make the cowboy butter sauce: In the same skillet, lower to medium heat and add another tablespoon of butter. Toss in minced garlic, allowing it to sauté until fragrant, about 30 seconds. Pour in the heavy cream and squeeze in fresh lemon juice, stirring to combine.
  4. Combine everything: Gradually add the cooked tortellini and steak bites back to the skillet, gently tossing it all in the creamy sauce. If the sauce is too thick, add reserved pasta water tablespoon by tablespoon until you reach your desired consistency.
  5. Finish with herbs and cheese: Stir in freshly chopped herbs and a sprinkle of grated Parmesan cheese. Taste and adjust seasoning as needed.
  6. Serve immediately: Plate the tortellini and steak bites, garnishing with additional herbs if desired. Enjoy the delectable symphony of flavors that is sure to impress!
