- 8 oz Lasagna Noodles
- 4 cups Chicken or Vegetable Broth
- 1 cup Alfredo Sauce
- 1 cup Heavy Cream
- 8 oz Mushrooms, diced
- 4 cloves Garlic, minced
- 1/2 cup Parmesan Cheese, freshly grated
- 2 cups Fresh Spinach or Kale
- Fresh Herbs (Basil and Parsley) for garnish
- Salt and Pepper to taste
Instructions
- Sauté the mushrooms and garlic in olive oil over medium heat for 5-7 minutes.
- Pour in the broth, followed by the Alfredo sauce and cream, and bring to a gentle simmer.
- Break the lasagna noodles into smaller pieces and add to the pot, cooking until al dente, about 10-12 minutes.
- Stir in the spinach or kale a few minutes before pasta is done.
- Taste and adjust seasonings; ladle into bowls and top with Parmesan and herbs.
- Serve warm, with crusty bread or salad on the side.
Notes
For a flavorful twist, add shredded chicken or plant-based sausage. Use less broth for a thicker consistency.
