Ingredients

  • 8 oz Lasagna Noodles
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Alfredo Sauce
  • 1 cup Heavy Cream
  • 8 oz Mushrooms, diced
  • 4 cloves Garlic, minced
  • 1/2 cup Parmesan Cheese, freshly grated
  • 2 cups Fresh Spinach or Kale
  • Fresh Herbs (Basil and Parsley) for garnish
  • Salt and Pepper to taste

Instructions

  1. Sauté the mushrooms and garlic in olive oil over medium heat for 5-7 minutes.
  2. Pour in the broth, followed by the Alfredo sauce and cream, and bring to a gentle simmer.
  3. Break the lasagna noodles into smaller pieces and add to the pot, cooking until al dente, about 10-12 minutes.
  4. Stir in the spinach or kale a few minutes before pasta is done.
  5. Taste and adjust seasonings; ladle into bowls and top with Parmesan and herbs.
  6. Serve warm, with crusty bread or salad on the side.

Notes

For a flavorful twist, add shredded chicken or plant-based sausage. Use less broth for a thicker consistency.
