- 1 cup shelled, unsalted pistachios
- 1 cup dried cranberries
- 1 cup rolled oats
- ½ cup nut butter (peanut, almond, or cashew)
- ½ cup honey or maple syrup
- 1 teaspoon vanilla extract
- Chia seeds or flax seeds (optional)
Instructions
- Gather all your ingredients, a mixing bowl, and line a baking sheet with parchment paper.
- In a large bowl, combine the pistachios, cranberries, oats, and nut butter until well mixed.
- Add honey and vanilla extract, stirring until the mixture is fully coated.
- Wet your hands and roll the mixture into small balls, about the size of a tablespoon, placing them on the lined baking sheet.
- Chill in the fridge for about 30 minutes before enjoying.

Feel free to adjust sweetness to taste and experiment with additional ingredients like shredded coconut or mini chocolate chips.
