A warm, vibrant roast chicken dish featuring a harmonious blend of sweet maple syrup and tart cranberries, perfect for holiday gatherings.
Ingredients
Scale
- 1 whole chicken (or chicken parts)
- 1/2 cup pure maple syrup
- 2 cups fresh cranberries (or frozen, unthawed)
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 cloves garlic, minced
- 1 onion, quartered
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the chicken: Rinse and pat it dry with paper towels.
- Make the glaze: In a bowl, whisk together maple syrup, olive oil, minced garlic, chopped herbs, salt, and pepper.
- Coat the chicken: Rub the glaze generously all over the chicken.
- Arrange the aromatics: Place quartered onions and fresh cranberries around the chicken.
- Roast and baste: Place the chicken in the oven and roast for about 1 hour and 15 minutes, basting every 20 minutes.
- Check for doneness with a meat thermometer (165°F/75°C).
- Let it rest for about 10-15 minutes before serving.
Notes
Consider tenting the chicken with foil if it browns too quickly. Always let the chicken rest after cooking to retain moisture.
