- 4 medium carrots, chopped
- 4 medium potatoes, diced

- 2 cups beef broth
- 1 cup red wine
- 2 tbsp olive oil
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prep your ingredients: Cut beef into cubes and season with salt and pepper. Chop vegetables.
- Sear the beef: Heat olive oil in a pot and sear the beef until browned.
- Sauté aromatics: Remove beef and sauté onions until softened, then add garlic.
