  • 2 teaspoons vanilla extract
  • 1 cup heavy cream
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a half-sheet pan with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar and eggs until pale, then mix in buttermilk and vanilla.
  4. Gradually fold dry ingredients into wet ingredients until just combined.
  5. Spread batter evenly in the pan and bake for 15-18 minutes, or until a toothpick comes out clean.
  6. Let the cake cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. Whip heavy cream with powdered sugar until soft peaks form.
  8. Spread whipped cream over the cooled cake and roll it up into a log shape.
