  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • Fresh mint leaves or peppermint extract
  • Green food coloring
  • Red candies for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, combine flour, cocoa powder, baking powder, baking soda, and sugar.
  3. In another bowl, whisk together eggs, milk, oil, and vanilla until smooth.
  4. Gradually add the wet ingredients to the dry mixture, stirring until just combined.
  5. Pour the batter into the lined tins, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool the cupcakes on a wire rack.
  8. For frosting, beat butter until creamy, then gradually add powdered sugar and cream, mixing until smooth.
  9. Stir in food coloring and mint/peppermint flavor.
  10. Frost cooled cupcakes and decorate with red candies.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. Consider adding chocolate ganache for extra flavor.
