Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a mixing bowl, combine flour, cocoa powder, baking powder, baking soda, and sugar.
- In another bowl, whisk together eggs, milk, oil, and vanilla until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring until just combined.
- Pour the batter into the lined tins, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool the cupcakes on a wire rack.
- For frosting, beat butter until creamy, then gradually add powdered sugar and cream, mixing until smooth.
- Stir in food coloring and mint/peppermint flavor.
- Frost cooled cupcakes and decorate with red candies.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. Consider adding chocolate ganache for extra flavor.
