Ingredients

  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ cup milk
  • Pinch of salt

Instructions

  1. Prep your oven by preheating it to 350°F (175°C) and greasing your mini muffin tin or shot glass molds.
  2. Mix together the softened butter and granulated sugar in a large bowl until light and fluffy, about 3 minutes.
  3. Add the eggs one at a time, ensuring they are well incorporated. Stir in the vanilla and almond extracts.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Combine the wet and dry ingredients, alternating with the milk, until the batter is smooth.
  6. Fill your molds about two-thirds full with the batter and bake for 10-12 minutes until golden brown.
  7. Let them cool completely before removing from the molds.
  8. Serve by filling each shot with spiced eggnog or hot chocolate, optionally blending in whipped cream.
