- 1 batch sourdough bread dough
- 2 cups mozzarella cheese, freshly grated
- 1 cup cremini or shiitake mushrooms, sliced
- 2 cloves garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
Instructions
- Prepare your sourdough dough ahead of time. If you’re using a starter, let it rise until it has doubled in size.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
- Drizzle some olive oil in a skillet over medium heat. Sauté minced garlic until fragrant—around 30 seconds—then toss in the sliced mushrooms. Cook until they’re golden and their moisture has evaporated, about 5-7 minutes.
- Mix in fresh herbs, a pinch of salt, and pepper to taste.
- Roll out the sourdough dough into a rectangle about 1/4 inch thick on a floured surface.
- Spread the sautéed mushroom mixture evenly over the dough. Then, sprinkle the grated mozzarella cheese generously across the mixture.
- Starting from one side, roll the dough tightly into a log shape. Pinch the ends to seal the roll-up securely.
- Slice the roll into 1-inch sections and place them on the prepared baking sheet.
- Brush the tops of the roll-ups with melted butter for a golden finish.
- Bake in the preheated oven for 18-20 minutes, or until golden brown.
