  • 1 batch sourdough bread dough
  • 2 cups mozzarella cheese, freshly grated
  • 1 cup cremini or shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil

Instructions

  1. Prepare your sourdough dough ahead of time. If you’re using a starter, let it rise until it has doubled in size.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  3. Drizzle some olive oil in a skillet over medium heat. Sauté minced garlic until fragrant—around 30 seconds—then toss in the sliced mushrooms. Cook until they’re golden and their moisture has evaporated, about 5-7 minutes.
  4. Mix in fresh herbs, a pinch of salt, and pepper to taste.
  5. Roll out the sourdough dough into a rectangle about 1/4 inch thick on a floured surface.
  6. Spread the sautéed mushroom mixture evenly over the dough. Then, sprinkle the grated mozzarella cheese generously across the mixture.
  7. Starting from one side, roll the dough tightly into a log shape. Pinch the ends to seal the roll-up securely.
  8. Slice the roll into 1-inch sections and place them on the prepared baking sheet.
  9. Brush the tops of the roll-ups with melted butter for a golden finish.
  10. Bake in the preheated oven for 18-20 minutes, or until golden brown.
