Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Incorporate eggs one at a time, mixing well after each addition.
- In a separate bowl, mix together the rolled oats, flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring just until combined.
- Fold in the semi-sweet chocolate chips until evenly dispersed.
- Scoop portions of dough onto a parchment-lined baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes, until the edges are set and the centers look slightly underbaked.
- Let the cookies cool on the baking sheet for a few minutes before transferring to wire racks.
