Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Incorporate eggs one at a time, mixing well after each addition.
  4. In a separate bowl, mix together the rolled oats, flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring just until combined.
  6. Fold in the semi-sweet chocolate chips until evenly dispersed.
  7. Scoop portions of dough onto a parchment-lined baking sheet, spacing them about two inches apart.
  8. Bake for 10-12 minutes, until the edges are set and the centers look slightly underbaked.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to wire racks.
