Ingredients

  • 12 large pasta shells
  • 2 cups cooked shredded chicken
  • 2 cups Alfredo sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1 cup fresh spinach
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian herbs (oregano, basil, or thyme)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling salted water, cook the jumbo shells until al dente, following package directions.
  3. In a skillet, sauté minced garlic in butter over medium heat until fragrant.
  4. Add shredded chicken and spinach to the skillet, mixing until heated through. Season with salt and pepper.
  5. In a bowl, combine the ricotta cheese with half of the mozzarella, garlic mixture, and your choice of herbs.
  6. Fill each cooked pasta shell generously with the chicken and spinach mixture, then place them in a baking dish.
  7. Pour Alfredo sauce over the shells, ensuring they’re well-coated. Sprinkle remaining cheese on top.
  8. Cover with foil and bake for 20 minutes. Remove the foil and broil for an additional 5–10 minutes until golden brown and bubbling.

Notes

Feel free to swap out ricotta for cottage cheese or add vegetables like broccoli or mushrooms for extra flavor and nutrition.
