Ingredients

- 2 cups corn (fresh, frozen, or canned)
- 8 oz cream cheese, softened
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 2 eggs
- 1/2 cup milk
- Salt, to taste
- Black pepper, to taste
- Optional: Mustard powder or paprika
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté onion and garlic until translucent, about 5 minutes.
- Combine corn, cream cheese, sautéed onions, eggs, milk, and cheese in a bowl. Season with salt and pepper.
- Transfer the mixture to a greased baking dish and sprinkle additional cheese on top.
- Bake for 30–35 minutes, or until golden and bubbly.
- Cool for a few minutes before serving.
Notes
For a lighter option, use low-fat cream cheese. Customize with jalapeños or bacon as desired.
