  2. Combine Ingredients: In a medium saucepan, combine strawberries, sugar, and lemon juice. Let sit for 15 minutes.
  3. Heat the Mixture: Over medium heat, bring the mixture to a low boil, stirring until sugar dissolves, then simmer for 10 minutes.
  4. Add the Champagne: Stir in champagne and simmer for another 5-10 minutes.
  5. Incorporate Gelatin: Dissolve gelatin in warm water and stir into the jelly until fully incorporated.
  6. Test Consistency: Place spoonful of jelly on a chilled plate to check if it holds its shape.
  7. Jar It Up: Pour jelly into sterilized jars, leaving space at the top, and let cool before refrigerating.
