Description
A warm and comforting Cajun Potato Soup, perfect for gathering loved ones around the table, loaded with creamy potatoes and fragrant spices.
Ingredients
Scale
- 4 large Yukon Gold or Russet potatoes, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon Cajun seasoning
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- 1/4 cup fresh parsley, chopped
Instructions
- Sauté the aromatics: Heat a drizzle of olive oil in a large pot over medium heat, add the onion, and sauté until translucent. Add garlic and bell peppers and cook until fragrant.
- Add potatoes and spices: Toss in the diced potatoes and Cajun seasoning, stirring to coat the veggies well, then cook for a minute.
- Pour in the broth: Add the broth, ensuring it covers the potatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the potatoes are tender.
- Cream it up: Blend some of the soup with a potato masher or immersion blender for a creamy texture, then mix in the cream or milk.
- Finish with fresh herbs: Stir in fresh parsley or green onions just before serving.
- Serve and enjoy: Ladle the soup into bowls, garnishing with extra herbs or a drizzle of cream if desired.
Notes
For a vegetarian version, replace chicken broth with vegetable broth. You can also use cauliflower for a lower-carb option, blending it for a creamy texture.
