- 1 medium butternut squash, peeled and diced into 1-inch cubes
- 3–4 apples (mix of tart and sweet, like Granny Smith and Honeycrisp), cored and sliced
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 2 tablespoons butter or olive oil
- Fresh herbs (sage or thyme), chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and dice the butternut squash into about 1-inch cubes.
- Core and slice your apples.
- Combine the squash and apples in a large bowl, then sprinkle with cinnamon, brown sugar, and a pinch of salt.
- Drizzle your choice of butter or olive oil over the mixture, and toss to coat.
- Add freshly chopped herbs, and mix again to combine.
- Transfer the mixture to a greased baking dish and cover with foil.
- Bake for 30-40 minutes, then remove the foil and bake for an additional 10-15 minutes, or until fork-tender.
- Serve warm and enjoy!
Notes
For variations, you can substitute maple syrup for brown sugar or add cranberries for extra flavor and color.
