  • 34 apples (mix of tart and sweet, like Granny Smith and Honeycrisp), cored and sliced
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 2 tablespoons butter or olive oil
  • Fresh herbs (sage or thyme), chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and dice the butternut squash into about 1-inch cubes.
  3. Core and slice your apples.
  4. Combine the squash and apples in a large bowl, then sprinkle with cinnamon, brown sugar, and a pinch of salt.
  5. Drizzle your choice of butter or olive oil over the mixture, and toss to coat.
  6. Add freshly chopped herbs, and mix again to combine.
  7. Transfer the mixture to a greased baking dish and cover with foil.
