Ingredients

  • 2 cups apple cider
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 cups vegetable or beef broth
  • 2 medium carrots, chopped
  • 2 lbs sweet potatoes, peeled and chopped
  • 4 tbsp butter
  • 1/2 cup cream
  • Fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Prep the short ribs: Season the short ribs generously with salt and pepper. Heat a large heavy-bottomed pot or Dutch oven over medium-high heat and add a drizzle of oil. Sear the ribs for about 4-5 minutes on each side, or until they develop a deep brown crust.
  2. Sauté the aromatics: Remove the ribs from the pot and set aside. Add onions and carrots, cooking until they soften, about 5-7 minutes. Add minced garlic and sauté for an additional minute.
  3. Deglaze the pot: Pour in the apple cider, scraping the bottom of the pot to release any brown bits. Allow the cider to simmer for a couple of minutes.
  4. Add herbs and broth: Place the short ribs back in the pot, add thyme, bay leaves, and enough broth to cover them halfway. Bring to a gentle boil.
  5. Braise: Lower the heat, cover, and let the dish braise on low for 2 to 2.5 hours until fork-tender.
  6. Make the rosemary mashed sweet potatoes: During the last 30 minutes of braising, boil sweet potatoes in salted water until tender. Drain and mash with butter, cream, and chopped rosemary. Season with salt and pepper.
  7. Finish the dish: Once the short ribs are ready, let them rest. Strain the braising liquid, return it to the pot, and let it reduce for about 10 minutes.
  8. Serve: Plate a scoop of rosemary mashed sweet potatoes, top with a short rib, and drizzle with the reduced braising sauce.

Notes

This dish freezes beautifully; just cool the ribs and sweet potatoes before freezing in airtight containers.
