A comforting dish of tender short ribs braised in apple cider, served with creamy rosemary mashed sweet potatoes.

- 3 lbs bone-in short ribs
- 2 cups apple cider
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 sprigs fresh rosemary
- 2 lbs orange-fleshed sweet potatoes, peeled and chopped
- 4 tbsp butter
- 1/4 cup cream
- Salt and pepper to taste
Instructions
- Prepare the short ribs: Season with salt and pepper. Heat oil in a skillet over medium-high heat and sear each side until browned, about 3-4 minutes per side.
- Sauté the aromatics: Remove ribs, then add onions and garlic. Cook until onions are translucent.
- Deglaze with apple cider: Pour in the cider, scraping the bottom of the pan.
- Add liquids and herbs: Return the short ribs, add beef broth and rosemary, then simmer. Cover and braise at 325°F for about 180 minutes.
- Prepare the mashed sweet potatoes: Boil chopped sweet potatoes until tender. Drain, mash with butter, cream, salt, and rosemary until creamy.
- Serve and enjoy: Plate the ribs over sweet potatoes, spooning the apple cider sauce on top.
Notes
For a lighter option, substitute butter and cream with olive oil in the mashed sweet potatoes.
