Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, whisk together flour, baking powder, and a pinch of salt.
  4. In a large mixing bowl, beat the softened butter and sugar until light and fluffy.
  5. Add eggs one at a time, incorporating each fully before adding the next, along with the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  7. Gently fold in the blackberries, being careful not to overmix.
  8. Pour the batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
