Description

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained
  • 1 can pinto beans, drained
  • 1 can diced tomatoes
  • 1 cup corn (canned or frozen)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • 4 cups chicken or vegetable broth
  • Fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Heat a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  2. Drain excess grease if needed.
  3. Add the chopped onion and minced garlic, stirring for 3-4 minutes until fragrant and translucent.
  4. Stir in the canned tomatoes, corn, and drained beans.
  5. Sprinkle in the chili powder, cumin, oregano, and paprika, mixing until the spices coat the ingredients.
  6. Pour in the broth, bringing the mixture to a boil. Once boiling, reduce heat to a simmer and cover the pot.
  7. Allow to simmer for about 20 minutes for flavors to meld.
  8. Taste and adjust seasoning. Stir in lime juice before serving.
  9. Ladle into bowls and customize with desired toppings.

Notes

For extra flavor, let the soup simmer longer or add additional veggies like zucchini or bell peppers.
