- 1 lb ground beef (or turkey)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can black beans, drained
- 1 can pinto beans, drained
- 1 can diced tomatoes
- 1 cup corn (canned or frozen)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp paprika
- 4 cups chicken or vegetable broth
- Fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Heat a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
- Drain excess grease if needed.
- Add the chopped onion and minced garlic, stirring for 3-4 minutes until fragrant and translucent.
- Stir in the canned tomatoes, corn, and drained beans.
- Sprinkle in the chili powder, cumin, oregano, and paprika, mixing until the spices coat the ingredients.
- Pour in the broth, bringing the mixture to a boil. Once boiling, reduce heat to a simmer and cover the pot.
- Allow to simmer for about 20 minutes for flavors to meld.
- Taste and adjust seasoning. Stir in lime juice before serving.
- Ladle into bowls and customize with desired toppings.

For extra flavor, let the soup simmer longer or add additional veggies like zucchini or bell peppers.
