  • 2 celery stalks, chopped

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat. Add onions and garlic, cooking until golden and fragrant.
  2. Season beef with salt and pepper, then add to the skillet, browning on all sides.
  3. Pour in a bit of beef broth to deglaze the pan, scraping up any bits.
  4. Add remaining broth, carrots, celery, and herbs. Bring to a simmer and cook for 1.5-2 hours until beef is tender.
  5. Stir in egg noodles and cook according to package instructions, about 6-8 minutes.
  6. Adjust seasoning and serve hot, garnished with fresh herbs.
