- 8 oz egg noodles
- 4 cups low-sodium beef broth

- 1 teaspoon dried thyme or fresh thyme
- 1 teaspoon chopped parsley

Instructions
- Heat olive oil or butter in a large skillet over medium heat. Add onions and garlic, cooking until golden and fragrant.
- Season beef with salt and pepper, then add to the skillet, browning on all sides.
- Pour in a bit of beef broth to deglaze the pan, scraping up any bits.
- Add remaining broth, carrots, celery, and herbs. Bring to a simmer and cook for 1.5-2 hours until beef is tender.
- Stir in egg noodles and cook according to package instructions, about 6-8 minutes.
- Adjust seasoning and serve hot, garnished with fresh herbs.
