- ½ cup unsalted butter, melted (or coconut oil)
- ¾ cup milk (whole or almond)
- 2 large eggs (or flax eggs)
- 1 tsp vanilla extract
- ½ tsp cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the flour, baking powder, sugar, and cinnamon. Whisk until well blended.
- In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
- Slowly incorporate the dry ingredients into the wet mixture, stirring gently to avoid overmixing. Fold in the blueberries, being careful not to break them.
- Drop spoonfuls of the batter onto your prepared baking sheet, leaving space between each fritter bite.
- Bake for 15-20 minutes, or until golden brown and a toothpick comes out clean.
- Allow cooling slightly, then serve warm, dusted with powdered sugar if desired.
Notes
