Description

Delicious baked fritter bites bursting with juicy blueberries, perfect for breakfast or as a snack.

Ingredients

Scale
  • 2 cups fresh blueberries
  • 1 ½ cups all-purpose flour (or a gluten-free blend)
  • 2 tsp baking powder
  • ½ cup sugar (or coconut sugar)
  • ½ cup unsalted butter, melted (or coconut oil)
  • ¾ cup milk (whole or almond)
  • 2 large eggs (or flax eggs)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the flour, baking powder, sugar, and cinnamon. Whisk until well blended.
  3. In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
  4. Slowly incorporate the dry ingredients into the wet mixture, stirring gently to avoid overmixing. Fold in the blueberries, being careful not to break them.
  5. Drop spoonfuls of the batter onto your prepared baking sheet, leaving space between each fritter bite.
  6. Bake for 15-20 minutes, or until golden brown and a toothpick comes out clean.
  7. Allow cooling slightly, then serve warm, dusted with powdered sugar if desired.

Notes

Mix the batter gently to keep fritters light and fluffy. You can add a pinch of nutmeg or fresh lemon zest for extra flavor.
