- 2 tablespoons Lime Juice
- 1 teaspoon Sugar
- 1 Red Chili, chopped (optional)
Instructions
- Prepare the ingredients: Start by dicing your ripe mango into bite-sized pieces. Set them aside in a large mixing bowl.
- Chop the vegetables: Thinly slice the bell pepper and cucumber. Mince the shallots finely. Combine these colorful veggies with the mango.
- Make the dressing: In a small bowl, whisk together the fish sauce, freshly squeezed lime juice, and sugar until the sugar dissolves. Adjust the seasoning with extra lime juice if desired.
- Combine everything: Pour the dressing over the mango-veggie mix and toss gently to combine. Add in the fresh herbs and peanuts last, giving it one final toss for good measure.
- Chill and serve: Let the salad sit at room temperature for about 15 minutes before serving, or chill in the fridge if preferred.
Notes
Assemble the mango and veggies ahead of time, but add the dressing just before serving to keep the ingredients crisp.
