Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve a cup of the pasta water before draining.
  2. Sauté garlic: In a large skillet, heat olive oil over medium heat. Toss in minced garlic and sauté until fragrant, about 30 seconds.
  3. Add spinach: Gently fold in the fresh spinach, stirring until it wilts down.
  4. Combine: Add the drained pasta to the skillet, along with ricotta. Mix until well-coated, adding reserved pasta water as needed for creaminess.
  5. Finish with lemon: Add the zest and juice of half a lemon, mixing well to combine.
  6. Serve immediately: Fold in Parmesan cheese and season with salt and pepper to taste. Enjoy hot!
