Ingredients

- 1 cup ricotta cheese
- 4 cups fresh spinach
- Zest and juice of 1/2 lemon
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and freshly cracked black pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve a cup of the pasta water before draining.
- Sauté garlic: In a large skillet, heat olive oil over medium heat. Toss in minced garlic and sauté until fragrant, about 30 seconds.
- Add spinach: Gently fold in the fresh spinach, stirring until it wilts down.
- Combine: Add the drained pasta to the skillet, along with ricotta. Mix until well-coated, adding reserved pasta water as needed for creaminess.
- Finish with lemon: Add the zest and juice of half a lemon, mixing well to combine.
- Serve immediately: Fold in Parmesan cheese and season with salt and pepper to taste. Enjoy hot!
