- 2 lbs pork shoulder or butt, cubed
- 4 Yukon Gold potatoes, diced
- 8 oz cremini and shiitake mushrooms, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 4 cups pork or vegetable broth
- 1 tbsp tomato paste
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp fresh thyme or rosemary
- Oil for sautéing
Instructions
- In a large skillet or Dutch oven, heat a splash of oil over medium heat. Add chopped onions and garlic, stirring until softened and fragrant.
- Add cubed pork to the pot and sear it on all sides for golden color and flavor.
- Toss in diced carrots and mushrooms, stirring them around until they release their water and soften slightly.
- Sprinkle in your spices—cinnamon, nutmeg, salt, and pepper. Stir to ensure the meat and veggies are coated.
- Pour in the broth until everything is just covered, then add the potatoes and a dollop of tomato paste. Bring it to a gentle boil.
- Reduce the heat to low, cover the pot, and allow it to simmer for about an hour, or until the pork is tender and the potatoes are soft.
- Before serving, taste the stew and adjust the seasonings as needed.
- Ladle into bowls and enjoy alongside hearty bread or a fresh salad.
Notes
Allow the stew to sit for a while after cooking for flavors to meld. Leftovers taste even better the next day.
