Ingredients

  • 2 lbs pork shoulder or butt, cubed
  • 4 Yukon Gold potatoes, diced
  • 8 oz cremini and shiitake mushrooms, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 4 cups pork or vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp fresh thyme or rosemary
  • Oil for sautéing

Instructions

  1. In a large skillet or Dutch oven, heat a splash of oil over medium heat. Add chopped onions and garlic, stirring until softened and fragrant.
  2. Add cubed pork to the pot and sear it on all sides for golden color and flavor.
  3. Toss in diced carrots and mushrooms, stirring them around until they release their water and soften slightly.
  4. Sprinkle in your spices—cinnamon, nutmeg, salt, and pepper. Stir to ensure the meat and veggies are coated.
  5. Pour in the broth until everything is just covered, then add the potatoes and a dollop of tomato paste. Bring it to a gentle boil.
  6. Reduce the heat to low, cover the pot, and allow it to simmer for about an hour, or until the pork is tender and the potatoes are soft.
  7. Before serving, taste the stew and adjust the seasonings as needed.
  8. Ladle into bowls and enjoy alongside hearty bread or a fresh salad.

Notes
