- 1 pound boneless chicken breast or thighs
- 8 ounces mushrooms (button, cremini, or shiitake)
- 2 tablespoons butter (or olive oil)
- 4 cloves garlic, minced
- 2 teaspoons fresh thyme or rosemary, chopped
- 1 cup chicken broth (low-sodium)
- Salt and pepper to taste
Instructions
- Prep the ingredients by chopping mushrooms and mincing garlic. Chop fresh herbs if using.
- In a large skillet, melt 1 tablespoon of butter over medium-high heat. Season chicken with salt and pepper, then add to the skillet. Sear until golden brown, about 5–7 minutes per side. Remove and set aside.
- Add another tablespoon of butter to the skillet, followed by the mushrooms. Cook until browned and tender, about 5 minutes.
- Add minced garlic and herbs to the skillet. Sauté for another minute until fragrant.
- Pour in the chicken broth, bring to a simmer, and scrape the skillet to release flavorful bits. Return the chicken to the skillet, coating it in the sauce.
- Let everything cook for an additional 5–10 minutes until the chicken is fully cooked and the sauce has thickened slightly.
- Remove from heat, drizzle with additional melted butter if desired, and serve.
Notes
Feel free to add seasonal vegetables or swap in tofu for a vegetarian version. Dried herbs can be used if fresh ones aren’t available—just use about one-third of the amount.
