Ingredients

  • 1 pound boneless chicken breast or thighs
  • 8 ounces mushrooms (button, cremini, or shiitake)
  • 2 tablespoons butter (or olive oil)
  • 4 cloves garlic, minced
  • 2 teaspoons fresh thyme or rosemary, chopped
  • 1 cup chicken broth (low-sodium)
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients by chopping mushrooms and mincing garlic. Chop fresh herbs if using.
  2. In a large skillet, melt 1 tablespoon of butter over medium-high heat. Season chicken with salt and pepper, then add to the skillet. Sear until golden brown, about 5–7 minutes per side. Remove and set aside.
  3. Add another tablespoon of butter to the skillet, followed by the mushrooms. Cook until browned and tender, about 5 minutes.
  4. Add minced garlic and herbs to the skillet. Sauté for another minute until fragrant.
  5. Pour in the chicken broth, bring to a simmer, and scrape the skillet to release flavorful bits. Return the chicken to the skillet, coating it in the sauce.
  6. Let everything cook for an additional 5–10 minutes until the chicken is fully cooked and the sauce has thickened slightly.
  7. Remove from heat, drizzle with additional melted butter if desired, and serve.

Notes

Feel free to add seasonal vegetables or swap in tofu for a vegetarian version. Dried herbs can be used if fresh ones aren’t available—just use about one-third of the amount.
