Description

A simple yet impressive dish featuring Whole Barramundi baked in a protective salt crust, resulting in tender, flaky fish with an extraordinary flavor.


Ingredients

  • 1 Whole Barramundi
  • 2 cups Coarse Sea Salt
  • 2 Egg Whites
  • Fresh Herbs (rosemary, thyme, dill)
  • Lemon slices
  • Whole Garlic cloves
  • Olive Oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rinse the Whole Barramundi under cold water and pat it dry thoroughly.
  3. Mix 2 cups of coarse sea salt with 2 egg whites until combined.
  4. Stuff the cavity of the fish with lemon slices, garlic cloves, and herbs.
  5. Spread half of the salt mixture onto a baking tray.
  6. Place the Barramundi on top of the salt bed and cover with the remaining salt mixture.
  7. Bake for about 30-35 minutes.
  8. Remove the tray from the oven and let it sit for about 10 minutes.
  9. Tap the crust with a spoon to break it apart.
  10. Fillet the fish and serve warm with a drizzle of olive oil.

Notes

Use fresh herbs for the best flavor. Allow the crust to harden for an impressive reveal.
