- 1 Whole Barramundi
- 2 cups Coarse Sea Salt
- 2 Egg Whites
- Fresh Herbs (rosemary, thyme, dill)
- Lemon slices
- Whole Garlic cloves
- Olive Oil
Instructions
- Preheat your oven to 450°F (232°C).
- Rinse the Whole Barramundi under cold water and pat it dry thoroughly.
- Mix 2 cups of coarse sea salt with 2 egg whites until combined.
- Stuff the cavity of the fish with lemon slices, garlic cloves, and herbs.
- Spread half of the salt mixture onto a baking tray.
- Place the Barramundi on top of the salt bed and cover with the remaining salt mixture.
- Bake for about 30-35 minutes.
- Remove the tray from the oven and let it sit for about 10 minutes.
- Tap the crust with a spoon to break it apart.
- Fillet the fish and serve warm with a drizzle of olive oil.
Notes
Use fresh herbs for the best flavor. Allow the crust to harden for an impressive reveal.
