- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 8 oz quality white chocolate, chopped
- 1 cup fresh raspberries, pureed
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust: Combine graham cracker crumbs and melted butter, then press into a greased 9×9-inch baking pan. Bake for 10 minutes and let cool.
- Make the cheesecake filling: Beat cream cheese until smooth, then gradually mix in sweetened condensed milk. Melt white chocolate and stir in half of the raspberry puree.
- Add eggs one at a time, blending until combined.
- Pour the cheesecake mixture over the cooled crust. Swirl in remaining raspberry puree.
- Bake for 30-35 minutes, until edges set but center is slightly wobbly.
- Cool completely, then refrigerate for at least 4 hours before slicing into squares.
Notes
For a dairy-free version, use vegan cream cheese or coconut milk. You can substitute raspberries with blueberries or strawberries as desired.
