- 1 lb boneless chicken (breast or thighs)
- 4 cups chicken or vegetable broth
- 8 oz cream cheese
- 8 oz lasagna noodles, broken into pieces
- 1 teaspoon fresh thyme
- 2 tablespoons fresh parsley
- 1 tablespoon fresh basil
- 4 cloves garlic, minced
- 1 onion, diced
- 8 oz mushrooms, sliced
- 2 tablespoons olive oil
Instructions
- In a large pot or Dutch oven, heat olive oil and sauté diced onions and minced garlic until fragrant.
- Add chicken, browning on both sides, then pour in broth and bring to a simmer until chicken is tender.
- Remove chicken, shred it, and return it to the pot.
- Stir in cream cheese until melted.
- Add pasta and any additional vegetables; simmer until pasta is tender.
- Finish with fresh herbs just before serving.
