Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 4 cups chicken or vegetable broth
  • 8 oz cream cheese
  • 8 oz lasagna noodles, broken into pieces
  • 1 teaspoon fresh thyme
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh basil
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 8 oz mushrooms, sliced
  • 2 tablespoons olive oil

Instructions

  1. In a large pot or Dutch oven, heat olive oil and sauté diced onions and minced garlic until fragrant.
  2. Add chicken, browning on both sides, then pour in broth and bring to a simmer until chicken is tender.
  3. Remove chicken, shred it, and return it to the pot.
  4. Stir in cream cheese until melted.
  5. Add pasta and any additional vegetables; simmer until pasta is tender.
  6. Finish with fresh herbs just before serving.
