- 1 cup glutinous rice flour
- ¼ cup sugar
- 1 pinch of salt
- ¾ cup water
- Cornstarch (for dusting)
- Watermelon (cubed)
Instructions
- Prepare the watermelon by cubing it into bite-sized pieces and set aside.
- In a mixing bowl, combine glutinous rice flour, sugar, and salt. Gradually add water to create a smooth batter.
- Transfer the batter to a heatproof dish or parchment-lined steamer basket and steam for about 20 minutes until translucent and slightly firm.
- Once steamed, sprinkle cornstarch on a clean surface and transfer the warm mochi onto it.
- Cool slightly and cut the mochi into squares or circles large enough to wrap around watermelon cubes.
- Place a watermelon cube in the center of each mochi piece, wrap and pinch edges to seal.
- Roll finished bites in more cornstarch to prevent sticking and refrigerate for at least 30 minutes before serving.
Notes
Work quickly while the mochi is still warm for easier handling. Keep an eye on the steaming time to ensure a soft and pliable texture.
