Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, spices, and salt.
- In a separate mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and molasses to the butter mixture and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, leaving space for spreading.
- Bake for 8-10 minutes, until the edges are set but the centers are still soft.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
- Prepare the icing by whisking together powdered sugar, a bit of milk, and vanilla extract until smooth. Drizzle over cooled cookies.
Notes
For a dairy-free option, substitute butter with coconut oil. Adjust the amount of molasses for preferred sweetness.
