Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until onions are translucent (4-5 minutes).
  2. Add chopped carrots and celery, sauté for another 5 minutes.
  3. Stir in the chopped cabbage, cooking until it begins to soften.
  4. Pour in the diced tomatoes and broth, and add salt, pepper, and herbs. Bring to a boil.
  5. Reduce heat and let it simmer for 30-40 minutes, allowing flavors to meld together.
  6. Taste and adjust seasoning, adding hot sauce if desired.
  7. Serve hot, garnished with fresh herbs.
