- 1 head of green cabbage, chopped
- 3 cloves of garlic, minced
- 1 onion, chopped
- 2 tomatoes, diced
- 4 cups of vegetable or chicken broth
- 2 carrots, sliced
- 2 stalks of celery, chopped
- Fresh herbs (thyme, parsley, or dill)
- Salt and pepper to taste
- Hot sauce (optional)
- Green peppers or bell peppers (optional)
- Zucchini (optional)
- Protein (cooked chicken, turkey, or beans, optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until onions are translucent (4-5 minutes).
- Add chopped carrots and celery, sauté for another 5 minutes.
- Stir in the chopped cabbage, cooking until it begins to soften.
- Pour in the diced tomatoes and broth, and add salt, pepper, and herbs. Bring to a boil.
- Reduce heat and let it simmer for 30-40 minutes, allowing flavors to meld together.
- Taste and adjust seasoning, adding hot sauce if desired.
- Serve hot, garnished with fresh herbs.
