Ingredients

- Spaghetti or fettuccine pasta
- 2 cups fresh basil leaves
- 1 cup walnuts
- 2 cloves garlic
- ½ cup grated Parmesan cheese
- ½ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Boil water in a large pot, add a generous pinch of salt, and cook the pasta according to package instructions until al dente. Reserve about half a cup of pasta water before draining.
- In a food processor, combine basil, walnuts, garlic, and Parmesan. Pulse to chop.
- With the processor running, drizzle in olive oil until a paste forms. Adjust consistency with reserved pasta water if too thick.
- In a large skillet over low heat, add the cooked pasta and pesto. Toss to coat.
- Plate with extra Parmesan, a drizzle of olive oil, and fresh basil for garnish.
Notes
Let the dish sit for a few minutes before serving to deepen the flavors.
