Description

A delightful and easy-to-make pasta dish featuring a rich walnut pesto that brings family and friends together.


Ingredients

  • Spaghetti or fettuccine pasta
  • 2 cups fresh basil leaves
  • 1 cup walnuts
  • 2 cloves garlic
  • ½ cup grated Parmesan cheese
  • ½ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot, add a generous pinch of salt, and cook the pasta according to package instructions until al dente. Reserve about half a cup of pasta water before draining.
  2. In a food processor, combine basil, walnuts, garlic, and Parmesan. Pulse to chop.
  3. With the processor running, drizzle in olive oil until a paste forms. Adjust consistency with reserved pasta water if too thick.
  4. In a large skillet over low heat, add the cooked pasta and pesto. Toss to coat.
  5. Plate with extra Parmesan, a drizzle of olive oil, and fresh basil for garnish.

Notes
