- 4 medium sweet potatoes, peeled and cubed
- 1/4 cup pure maple syrup
- 1/2 cup walnuts, chopped and toasted
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and cube the sweet potatoes into even 1-inch pieces.
- Combine the sweet potatoes, olive oil, maple syrup, and sea salt in a large bowl. Toss until well coated.
- Spread the sweet potatoes in a single layer on the baking sheet.
- Roast for 25-30 minutes, flipping halfway through.
- Sprinkle the walnuts over the sweet potatoes in the last 5 minutes of roasting.
- Remove from the oven once crispy and tender.
- Serve warm, drizzled with extra maple syrup if desired.
Notes
For a different crunch, substitute walnuts with pecans or almonds. You can also use agave nectar or honey instead of maple syrup.
